CULL EWE (MUTTON)

A new product for MACDUFF in 2020 is Cull Ewe, more commonly known as mutton. These are retired breeding ewes that for one reason or another have lambed for the last time. They generally come into us between 4-6 years of age, having lived out a happy retirement out on the lush grasslands of Scotland. The meat therefore is complex, gamier in flavour than lamb, and more beef like in texture. If the carcase is hung for at least two weeks: the result is a juicy, well-flavoured meat, firm but not tough. In recent times there has definitely been a real trend back towards top-end restaurants and Michelin star chefs working with this amazing produce and here at MACDUFF we wanted to ensure our independent retail customer base are able to also offer cull ewe to the general consumer to cook at home.
