Ingredients (serves 6-8)

1.25kg (2 ½lb) lean beef roasting joint (boneless rib of beef, topside or sirloin)

15ml (1tbsp) mild chilli sauce

15ml (1tbsp) olive oil

4 cloves garlic
(remainder cut into wedges)


  1. Weigh joint and calculate cooking time.
  2. Mix together remaining ingredients and spread over the beef.
  3. Open roast in a preheated oven Gas Mark 4-5, 180°F, 350°’ for the calculated cooking time. Cover with foil if topping starts to catch.

Serve thinly sliced roast beef with roasted vegetables (roast at the same time as the joint wedges of pumpkin or butter nut squash, small new potatoes scattered with fresh sprigs of rosemary and lemon wedges) .
