MACDUFF Beef Sirloin Steak

MacDuff Sirloin Steak

Ingredients (serves 2)

2 lean beef sirloin steaks

Goat’s Cheese Butter:

100g (4oz) Goat’s cheese, softened

100g (4oz) unsalted butter, softened

15ml (1tbsp) fresh parsley, finely chopped

15ml (1tbsp) fresh basil, roughly torn

Method

Goat’s Cheese Butter:

  1. Place all ingredients into a food processor and blend thoroughly (about 2 minutes). (This can be done by hand if you wish, just work the butter in a bowl and then add cheese and herbs.)
  2. Roll in cling film into a sausage shape and refrigerate until ready to use.

Steak:
Serve steak with a slice of the goat’s cheese butter on top, sliced and baked onions and potatoes and a salad of sliced tomatoes, blanched green beans and black olives.
